The Fabbri farm is located in the municipality of Lajatico in the province of Pisa The Fabbri farm is located in the hills of the Teatro del Silenzio Lajatico and its main activity is the production of honey and other bee products such as pollen, propolis and royal jelly. Following extensive and accurate checks of honey, wax and manufacturing procedures by the relevant authorities, in 2015 the Company has obtained the organic certification and currently manufactures and markets exclusively organic products.
- The company and its history The Fabbri farm has been producing honey for three generations. The grandfather of Elisabetta, the owner, used to build the bee houses, the so called 'beehives' by using cork and wooden planks that during the war were also recovered from ammunition boxes. At that time almost all the peasants families owned hives, this to facilitate the pollination of fruit trees and also to have sufficient honey for their family needs. Today the company is run by Elisabetta and her husband Stefano that with time have been literally affected by the passion for beekeeping. In the years they have increased the number of hives and have equipped with a laboratory for honey extraction that reflects the sanitary regulations for organic production in force, while offering the chance to buy their products directly at the Miele Fabbri selling point in Lajatico too.
- Production cycle Even if production methods have evolved over time, these are not going to change the tradition of the product that is still selected with utmost care and patience, so distinguishing the various types of honey that is harvested without being 'processed' but only filtered (so to eliminate any small residues of wax and propolis) and packaged directly by the beekeepers. For this reason the Miele Fabbri is considered to be a completely natural product.
- Variety and types In the spring, the hills of the Teatro del Silenzio Lajatico (PI) appear to the onlookers as a true show of colors and scents, thanks to the variety of flowers that grow spontaneously. Due to that there is a diversity in the types of honey produced, although the real pride of the Fabbri farm is undoubtedly the ‘Sulla’ honey, from the deep red color flower which is typical of the hilly areas of central and southern Italy. This type of honey has a light color and a mild flavor, particularly appreciated to children.
