The color varies depending on the harvest period and the species of flowers present in the collection area, ranging from very light shades similar to acacia (robinia) with on and clover blooms to dark or medium dark shades with typical blooms of the second half of the year .

Both the smell and the aroma are balanced, both sweet, not very persistent and without particular exaltations.

Honey tends to crystallize more or less depending on the composition, some types also quite quickly and in a short period. The eventual crystallization is not always regular with presence in some cases of large and angular crystals.
